This might be a strange question - I have a record player lined-in to the Sonos Five. Is there anyway to stream the music from the record player, via the Sonos Five, to the Sonos app itself, either on my Iphone or Mac? as if the Sonos app is another Sonos speaker?

No. The Sonos app itself is merely a remote control to what is happening on the speaker, there is no ‘music’ in the app itself.
