I’m sure I once came across a setting where i could control the increments on volume when pressing volume on my iPhone. For instance a press would be 1,5 or 10 % increments.
I’ve searched high and low for that setting but cannot find it. The steps are far too large, especially at very low volumes.

Yes, you had come across that option, quite a while ago. Then Apple removed the ability to do so, and apparently ‘threatened’ Sonos to not maintain their app in the iOS store if they continued to use the ‘hack’ that Sonos was using to do so.
You can still tap to the side of the volume slider in the app for finer control, if you are, as I am, more prone to ‘fat fingering’.
