Is it better to use the Tidal App or the Sonos app for the best music quality?

Welcome to the Sonos Community!

I am not aware of any streaming quality differences whether playing Tidal from the Sonos app, or playing from the Tidal app to Sonos.

In both cases, you can have either 320kbps lossy, or 1411kpbs FLAC.

At present, you cannot play Atmos tracks from Tidal without streaming to a TV connected to an Arc or Beam (gen 2).
