How can I add my partners Apple and Amazon playlists to my Sonos account

He would have to share the playlists with you using the Apple Music app & Amazon Music app on his phone.
Below is the Amazon Music example where you can copy the link or send it to him as a text message. Apple works the same way. Touch the 3 dots with the playlist open and select Share.
