I know that Sonos S2 only supports a max of 24 bit 48 kHz files but here's the question I cannot find and answer to: if I have 24 bit 192 kHz FLAC files on my NAS in my Library, will sonos play them, albeit in a downsampled format or will they be skipped altogether?

Can someone please clarify this?

Skipped. The Sonos software is unable to ‘read’ them in order to downsample them.

That's definitive; thank you!

Definitive, maybe, but not final: I use Airplay, sending my high res Roon library (including 192/24 files) on my iPad. It downsamples my 192/24 to 44/16 and plays them on my Sonos Arc.

Right, but that’s not Sonos reading the file, it is another player that has different capabilities. Not what was asked.
