When in the SiriusXM Favorites view on the Windows 11 Controller (Sources > SiriusXM > Favorites > Channels), the song currently playing on each favorite channel is displayed, however after playing music for a bit, the songs do not update.

Does the same issue happen with any other music source/service? If so, I’d certainly suggest a reboot of all the devices concerned: the speaker, the computer and the router. If you have any devices that extend the range of your WiFi (excepting mesh systems) you could also test with these turned off.
If it is only SiriusXM that produces the problem, then the problem is most likely outside of your system.
