I know that the Sonos App displays a Dolby Atmos icon when my Arc is playing an Atmos Title but when it’s just 5.1, should I expect a Dolby 5.1 Icon?

Not currently, no. It’s been requested, but no one in the public knows if they’ll implement it.
+24No, you’ll need to use a third party app to see the other codec types on the Now Playing screen.
