I think it depends on the hardware/iOS version. On my iPad and iPhone, I pull down from the upper right corner, then click on the top right icon to get a list of available AirPlay 2 targets. But you may need to check with an Apple forum for yours, as I think in some cases, it’s different.

Also, the app itself, Djay3, needs to support AirPlay 2 use, by having included the correct API from Apple in their application. Not all applications have chosen to do this, and not being a user of Djay3, I’ve no idea about them.
