I can’t see a way to add a station to an alarm. For example, I listen to Folk Alley through Sonos Radio, yet there does not seem to be a path to create an alarm with this channel, as only certain stations appear in the list of available alarm music choices. Am I missing something in the Alarm setup

No, you are not missing anything. For some reason not all the Sonos Radio stations are available when setting an alarm. It would be helpful if Sonos added a search feature to help find those stations during the alarm setup process.
