My Spotify is alphabetical in the Spotify app. Why isn’t it alphabetical in Sonos? Better yet, why can’t the songos app let me alphabetize things? 

Sonos doesn’t do any sorting of the data they receive back from the Spotify ( or anyone else’s, for that matter) server. You’d need to ask Spotify why they aren’t sorting it in the way you’ve indicated in their app for the Sonos connection.
