I am building a new home. In our great room we will have a frame TV, sonos amp and 6 architectural in ceiling speakers. 2 of the speakers will be in the kitchen and I want to be able to control the volume of the kitchen speakers separately from the other 4. Sonos says that typically 4 speakers are used per amp but if you use Sonos Architectural speakers (8 ohms) u can use 6, but then they need to be wired in parallel. My question is: can I use a simple wall-mounted volume control dial to control the volume of the two kitchen speakers?

Yes. I recommend installing controls for all speakers. This will give you the greatest operational flexibility.
