I currently have 2 outdoor speaker (6 ohm) connected to my Amp. I am looking to add one more speaker— for a total of 3 speakers— to the setup. My questions are this: is this possible? If so what ohm would the 3rd speaker need to be and what type of wiring should I do? Thanks!!

You are limited to 4 Ohms per channel, no lower, and even an 8 Ohm speaker in parallel with a 6 Ohms speaker is lower than 4 Ohms (3.43 Ohms).
