Should the Sonos speakers be switched off after use? If so, is switching off at the plug the only way?

No, it is meant to keep running.  It will enter a low power stated shortly after the audio is stopped.   Powering electronics on/off causes the majority of wear and tear, due to the thermal cycling. Leaving them running, as long as they have adequate ventilation, can prolong life rather than shorten.
