One Sonos Play 5 keeps cutting in & out!

A bit more info would help?

Do you have more than one play 5 or other Sonos kit? How is the turntable connected. Have you checked the compression setting on Sonos and set to uncompressed?

Check whether your Line In compression setting is 'Compressed'. If not, switch it to that setting and see if it makes a difference. If it does, this indicates that your network is struggling with the relatively high bandwidth requirements of uncompressed transmission.
And my experience is that compressed does not cause any audible deterioration in the vinyl sound obtained in practice, although in theory it does. So if that fixes the problem, don't fret over using compressed.

Another thing to try if convenient is running an ethernet cable from one 5 to the other.
