When I ask any of my Google Assistant activated Sonos Ones to play a song from my connected default Music Service, Spotify, Google responds “I can’t do that here but you can ask me to do that on one of your other devices.”

Try removing Spotify from your music services in the Sonos app and re-adding it. Also try unplugging your Ones from power.
