I have a new Beam and have set it up with two Play 3s - works fine.

We also have a Sonos One - is it possible to add this to the surround sound so that it’s volume can be controlled when we use the Beam?

No, you can only have a pair of surround speakers, not 3.  There are only 2 channels of audio to play anyway.   You can setup the Sonos One as a separate room though (as it problem is) and group it with your Beam room to play the TV audio.  However, the audio on the One would be delayed created an echo effect.  You could control  the group volume with the Sonos app, but not the TV remote.
