Hi folks
Do you know if i when i connect my turntable to my Sonos Connect line in and my old speaker to the line out, the Connect bypass the signal or it converts analog signal to digital and back to analog?

The latter; it does not do a pass-through. Except for the delay added it does not make any difference that can be heard though.
