My new tv comes with a list of speaker companies that it pairs with why is sonos not on the list? And what code can I use to program my universal remote manualy?

That's not the way it works. Sonos learns whichever IR code you teach it.
I suggest you program your universal remote with a TV code for a different manufacturer to your actual TV. Teach that to Sonos during setup. That way only the Sonos speaker will react, not your TV.

If by "pair" you are indicating that you want to use Bluetooth to send audio to your SONOS speakers, SONOS does not support Bluetooth. If you want to use an IR remote to control Volume on a SONOS PLAYBAR/BEAM/PLAYBASE, follow ratty's suggestion.
