Pair a Sonos One with a pair of Play 3s
Can I pair 1 Sonos One with 2 Play 3s or do I have to group?

You have to group. Although you could stereo pair the 3s. Pairing three things has no meaning in Sonos, or arguably anywhere else.
I guess I should have given more context. I have the Sonos One (1 unit) with Alexa in my bedroom which has 2 Play 3s. When playing grouped music (Sonos One + 2 Play3s) which can be initiated by asking Alexa to play music in the Bedroom; a subsequent Alexa command does not mute the Play 3s. Also, you can’t un-group or add other rooms with Alexa...need to manually control in Sonos.
